From fruity, to fog and smoke, there's always a new trend in the world of cocktails, but whatever your drink of choice, here are some of the best summer cocktail recipes to keep you cool and refreshed all summer. Prosecco-and-pomegranate Cocktail

This summer cocktail is good for 8 servings and easy to make (5 minutes prep time and 15 minutes cooking time. It's dairy free and perfect for fat conscious people.

Here's what you need:

  • 2 cups pure pomegranate juice
  • 1⁄3 cup lemon juice
  • 65g sugar
  • 1 x 750mlProsecco bottle

Here's how to make it:

  1. Simmer all the ingredients except the Prosecco, uncovered, until syrupy and reduced to about cup.
  2. Divide the Prosecco between glasses and add 1 t pomegranate syrup to each glass.

Leann's Low Calorie Cocktail

This summer cocktail is good for 2 servings, easy to make and low calorie.

Here's what you need:

  • 2oz Tito’s vodka
  • 5oz Fresca flavored soda (0 calories)
  • A splash of POM (blueberry pomegranate flavor)

Here's how to make it:

  1. Mix in a jug, the vodka, soda and POM and stir.

Spicy tequila-and-coconut Cocktail

This summer cocktail is good for 6 servings, easy to make (10 minutes prep time and 5 minutes cooking time). This drink is dairy free, enjoy weight conscious people.

Here's what you need:

  • 4T sugar
  • T water
  • 1cup good-quality tequila
  • 2 x 400ml coconut milk cans
  • 15g coriander
  • 3 limes, zested and juiced
  • ½ red chili, roughly chopped
  • 3T ginger, grated
  • ¼ cup coconut liqueur

Here's how to mix it:

  1. Heat the sugar and water in a saucepan over a medium heat until all the sugar has dissolved.
  2. Remove from the heat and allow to cool.
  3. Place the tequila, coconut milk, coriander, lime zest and juice, chili, ginger and coconut liqueur in a blender.
  4. Add the sugar syrup and a glass of crushed ice and blend.
  5. Serve in tall glasses.

Watermelon and Rosemary Cocktail

This summer cocktail is good for 1 serving, easy to mix (5 minutes prep time).

Here's what you need:

  • 200g fresh watermelon
  • 4t lime juice
  • 1T agave nectar
  • 4t soda water
  • Wild rosemary, to garnish

Here's how to make it:

  1. Muddle the watermelon in the bottom of a shaker; add the remaining ingredients, except the soda water and rosemary.
  2. Shake with blocked ice.
  3. Strain neat into a stemless Champagne flute, add the soda and garnish with wild rosemary.

Fresh cucumber-and-gin Cocktail

Here's what you need:

  • 2 English cucumbers, peeled and chopped
  • 4 Granny Smith apples, roughly chopped
  • 1 lemon, peeled and roughly chopped
  • 1⁄4 cup good-quality gin
  • crushed ice, for serving
  • 3 Woolworths mini cucumbers

Here's how to make it:

  1. Juice the cucumbers, apples and lemon in a juicer. Mix in a jug, and then stir in the gin.
  2. Half-fill glasses with crushed ice, then pour in the cocktail.
  3. Using a vegetable peeler, thinly shave ribbons from the mini cucumbers and use to garnish the glasses before serving.
