  • 1/3 cup hot caramel ice cream topping, warmed
  • 1 graham cracker crust (9 inches)
  • 3 tbsp. chopped pecans
  • 1/3 cup chopped walnuts

FILLING:

  • 1 cup cold whole milk
  • ¼ cup refrigerated Italian sweet cream non-dairy creamer
  • 1 package (3.4 oz.) instant pumpkin spice pudding mix
  • ½ cup Philadelphia ready-to-serve cheesecake filling
  • ½ tsp. pumpkin pie spice
  • ¼ tsp. ground ginger

TOPPINGS:

  • 1 carton (8 oz.) frozen whipped topping, thawed
  • 1 tbsp. hot caramel ice cream topping
  • 1 tbsp. coarsely chopped walnuts
  • 1 tbsp. coarsely chopped pecans

Here's how to make it:

  1. Spread caramel topping over the bottom of the crust. Sprinkle with nuts.
  2. For the filling, whip creamer, milk, and pudding mix for 2 minutes. Add cheesecake filling and pumpkin pie spice and ginger until blended. Pour over nut mixture. Let stand for 10 minutes.
  3. Spread whipped topping overfilling. Refrigerate for 4 hours or overnight until set. Before serving, drizzle with 1 tablespoon caramel topping; sprinkle with pecans and walnuts.

  • ½ c. heavy cream
  • 1/3 c. packed light brown sugar
  • ¼ c. whole milk
  • 2 large eggs plus 1 large egg white
  • ½ tsp. ground cinnamon
  • ½ tsp. ground ginger
  • Pinch ground cloves
  • Candied pecans, for serving

Here's how to make it:

  1. Preheat oven to 350 degrees F.
  2. On a baking sheet, toast pecans and oats for 10 to 12 minutes until golden and fragrant; let it cool.
  3. To make the crust: In a food processor, add butter, granulated sugar, oats, pecans, oats, and salt and process for 2 to 4 minutes until finely ground. Press mixture in bottom and up sides of a 9-inch pie plate. Freeze for 15 minutes. Place the crust on a baking sheet and bake for 20 to 25 minutes until set. Let it cool on a rack.
  4. To make the filling: Whip together pumpkin, cream, brown sugar, milk, eggs, cinnamon, ginger, cloves, and ¼ teaspoon salt. Pour into the crust and bake for 40 to 45 minutes until filling is set. Let it cool on a rack.
  5. Chill at least 2 hours before serving.
  6. Serve topped with candied pecans.

  • 4 large pasteurized eggs, separated
  • ¾ cup plus 3 ½ tbsp. sugar, divided
  • 1 (8 oz.) container mascarpone cheese
  • 1 cup heavy whipping cream
  • 1 tsp. vanilla extract

Here's how to make it:

  1. Preheat oven to 350 degrees.
  2. On a baking sheet, place coconut and toast in the oven for 8 to 10 minutes, stirring halfway through.
  3. In a medium bowl, mix 1 cup coconut, crumbs, melted butter, and 1 tablespoon sugar.
  4. Press mixture into a 10-inch pie plate and refrigerate. (You can also use a 9-inch plate. The filling will just be piled higher.)
  5. In a 3-quart saucepan, whisk milk and gelatin. Let it stand for 1 minute. Cook over medium heat, stirring constantly for 1 minute until gelatin dissolves.
  6. Mix in pumpkin, cinnamon, egg yolks, ginger, nutmeg, salt, and ½ cup sugar.
  7. Cook and stir mixture for 5 to 7 minutes. Do not let boil. Turn heat down if it starts to bubble.
  8. Into a bowl, pour the mixture and refrigerate for 40 minutes, stirring halfway through. About 15 minutes before the 40 minutes is up, beat egg whites at high speed with a whisk attachment for about 8 to 10 minutes until soft peaks form.
  9. Slowly add ¼ cup sugar to egg whites and beat for 2 to 3 minutes until stiff peaks form.
  10. Add 1/3 of egg white mixture into pumpkin mixture and fold in with a rubber spatula. Fold in another third and then the remaining egg whites.
  11. Pour into crust and chill for 2 hours.
  12. Beat mascarpone cream and heavy whipping cream until soft peaks form. Gradually add sugar and vanilla and beat until the mixture is stiff. Spread on top of the pie. Sprinkle with remaining coconut and serve. Store leftovers in the refrigerator.
