What you need:
- 6 (6 oz.) bone-in pork chops
- Kosher salt and freshly ground black pepper
- 1/4 c. light brown sugar
- 2 tbsp. smoked paprika
- 1 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. cayenne pepper
- Canola oil, for grill grates
- 2 c. Peach Relish
How to prepare:
- Make sure to pat pork chops dry with paper towels and season with salt and black pepper. In a medium bowl, add brown sugar, paprika, cumin, garlic powder, and cayenne pepper and mix. Coat chops evenly on all sides with spice mixture. Cover and chill for 3 hours.
- Set up a grill for direct cooking and heat to medium-high. Once hot, clean, and lightly oil the grates.
- Grill chops, turning occasionally, until charred and internal temperature registers 145°F on an instant read thermometer for 8 to 10 minutes. Let the grilled chops rest for 5 minutes before serving with Peach Relish.

What you need:
- 3 lb. baby potatoes
- Kosher salt
- Pepper
- 1 red onion (small sliced)
- ½ cup Champagne vinegar
- ¼ cup extra-virgin olive oil (plus more for brushing)
- 1 cup parsley (lightly packed, chopped)
- 2 cups kettle-cooked salt-and-vinegar chips (coarsely crushed)
How to prepare:
- In a large saucepan, add potatoes and water, cover, and bring to a boil. Add a generous pinch of salt and cook over moderately high heat for about 20 minutes until tender. Drain and spread on a baking sheet to cool, then cut in half.
- Meanwhile, in a large bowl, add red onion with the Champagne vinegar and mix. Let stand for 10 minutes.
- Light a grill and oil the grate. Grill the potatoes cut side down over moderately high heat for about 5 minutes until lightly charred. Transfer to the bowl, add onions, 1/4 cup of olive oil and mix well. Let cool completely. season with salt and pepper and stir in the parsley. Top with chips and serve.

- 2 tbsp. olive oil
- Kosher salt and pepper
- ½ c. teriyaki sauce
How to prepare:
- Set up a grill for direct cooking and heat to medium-high. Once hot, lightly oil the grates. In a bowl, toss steak, onion, mushrooms, and olive oil. Season with salt and pepper. Thread onto skewers, separating onion layers.
- Grill kebabs, turning occasionally, for 8 to 10 minutes medium-rare or until steak reaches desired doneness. Basting with teriyaki sauce during the last 2 minutes of cooking.
