Smoky Grilled Dry-Rub Pork Chops by Kate Merker

These Smoky Grilled Dry-Rub Pork Chops by Kate Merker are spicy-sweet chops, simple to make and fall-off-the-bone delicious!

Total prep time:  3 hours and 50 minutes

Yields: 6

What you need: 

  • 6 (6 oz.) bone-in pork chops
  • Kosher salt and freshly ground black pepper
  • 1/4 c. light brown sugar
  • 2 tbsp. smoked paprika
  • 1 tsp. ground cumin
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cayenne pepper
  • Canola oil, for grill grates
  • 2 c. Peach Relish

How to prepare:

  1. Make sure to pat pork chops dry with paper towels and season with salt and black pepper. In a medium bowl, add brown sugar, paprika, cumin, garlic powder, and cayenne pepper and mix. Coat chops evenly on all sides with spice mixture. Cover and chill for 3 hours. 
  2. Set up a grill for direct cooking and heat to medium-high. Once hot, clean, and lightly oil the grates. 
  3. Grill chops, turning occasionally, until charred and internal temperature registers 145°F on an instant read thermometer for 8 to 10 minutes. Let the grilled chops rest for 5 minutes before serving with Peach Relish.

This Grilled Baby Potato Salad by Justin Chapple is the perfect salad for your grilled dishes!

Total prep time:  1 hour

Yields: 8

What you need: 

  • 3 lb. baby potatoes
  • Kosher salt
  • Pepper
  • 1 red onion (small sliced)
  • ½ cup Champagne vinegar
  • ¼ cup extra-virgin olive oil (plus more for brushing)
  • 1 cup parsley (lightly packed, chopped)
  • 2 cups kettle-cooked salt-and-vinegar chips (coarsely crushed)

How to prepare:

  1. In a large saucepan, add potatoes and water, cover, and bring to a boil. Add a generous pinch of salt and cook over moderately high heat for about 20 minutes until tender. Drain and spread on a baking sheet to cool, then cut in half.
  2. Meanwhile, in a large bowl, add red onion with the Champagne vinegar and mix. Let stand for 10 minutes.
  3. Light a grill and oil the grate. Grill the potatoes cut side down over moderately high heat for about 5 minutes until lightly charred. Transfer to the bowl, add onions, 1/4 cup of olive oil and mix well. Let cool completely. season with salt and pepper and stir in the parsley. Top with chips and serve.

  • 4 corn cobs
  • 1/4 c. red pepper jelly
  • 1 tsp. rice wine vinegar
  • 1 scallion, thinly sliced

How to prepare:

  1. Set up a grill for direct cooking and heat to medium-high. Once hot, lightly oil the grates. Grill shucked corn cobs, turning occasionally for 6 to 8 minutes or until charred. 
  2. In a bowl, add red pepper jelly and rice wine vinegar and whisk until smooth. Brush onto corn cobs and sprinkle with thinly sliced scallion.

What you need: 

  • Canola oil, for grill grates
  • 1 ½ lb. strip or sirloin steak, trimmed and cut into 1 1/2-inch pieces
  • 1 medium red onion, cut into 1-inch wedges and halved
  • 8 oz. mushrooms, trimmed and halved, if large
  • 2 tbsp. olive oil
  • Kosher salt and pepper
  • ½ c. teriyaki sauce

How to prepare:

  1. Set up a grill for direct cooking and heat to medium-high. Once hot, lightly oil the grates. In a bowl, toss steak, onion, mushrooms, and olive oil. Season with salt and pepper. Thread onto skewers, separating onion layers. 
  2. Grill kebabs, turning occasionally, for 8 to 10 minutes medium-rare or until steak reaches desired doneness. Basting with teriyaki sauce during the last 2 minutes of cooking.
