Meringue Fruity Wreath

By: WOMAN'S DAY KITCHEN

A pretty and healthy dessert is best served after a sumptuous brunch or dinner. Wreaths are not just for your doors - this lighter than air meringue recipe belongs in your belly.

Yield: 1

Prep time: 25 minutes

Total Prep time: 2 hours

Here's what you need:

  • 1 tbsp. cornstarch
  • 1 1/2 c. superfine sugar
  • 1 tsp. white vinegar
  • 1 tsp. pure vanilla extract
  • 1 c. heavy cream
  • 6 large egg whites
  • 8 oz. strawberries
  • 1 6-oz. pkg. raspberries
  • 1/2 c. blueberries
  • 2 tbsp. granulated sugar
  • 2 tsp. lemon juice
  • Edible flowers, for serving

Here's how to cook it:

  1. Heat oven to 275°F.
  2. Prepare a large baking sheet with parchment paper. Draw a circle on the parchment about 8-inch, then turn the paper over.
  3. In a medium dry bowl, mix the cornstarch and superfine sugar.
  4. In a large bowl, beat the egg whites and vinegar with of an electric mixer on medium-high speed for 1 to 2 minutes until it reaches foamy peaks form. Slowly add the superfine sugar mixture about 1 tablespoon at a time, beat for 1 minute between additions, until the whites become stiff and glossy. Gradually add the vanilla, and then beat for 1 minute. Put the mixture in a large piping bag with a large star tip.
  5. To stick the parchment on the baking sheet, use 4 small dabs of meringue. As a guide, use the circles; make sure to pipe the meringue mixture into 8 nests and each nest should touch on two sides around the circle. Create a divot by using a large spoon in each one and start piping small stars in between the nests
  6. Bake for 1 hour 30 minutes in the oven. Turn it off and let the wreath cool and during this time, do not open the oven for at least 3 to 4 hours or more.
  7. Before serving, 20 minutes approximately, mix the fruit with the lemon juice and granulated sugar. Whip the cream until it reaches the soft peaks form. Fill each meringue nest with cream, then top with berries. Dust with edible flowers, if desired.
