- ½ cup of Blue Diamond Sriracha Almonds
- 1 pound of fresh Alaskan salmon
- 1 egg white, whisked
- 1 tablespoon of salt
- 2 tablespoon of oil
Here are the ingredients for the sauce:
- Half a cup of Greek yogurt
- 2 tablespoon of Sriracha
- 1 tablespoon of white vinegar
- ¼ tablespoon of garlic powder
Here’s how you make them:
- Preheat your oven to 425 degrees and prep.
- While the oven is heating up, grab a ziplock bag and transfer all of the almonds to the bag. Use a rolling pin to crush the almonds into coarse crumbs.
- Pat your salmon dry and generously coat it with the almond crumbs.
- Brush with egg whites and add in more almond crumbs.
- In a skillet, sear the salmon for about a minute or two. Add in a tablespoon of oil (or more if necessary).
- Transfer to the oven and bake for about 5 to 10 minutes.
- For the sauce, throw in all of the ingredients in a bowl until well incorporated.
- Serve it piping hot and enjoy!
Kale Risotto
This kale-based risotto is so scrumptious you’ll forget it’s healthy!
Here are the ingredients:
- Half a cup of walnuts
- 4 tbsp. Of olive oil
- White onion, chopped
- 1 cup of arborio rice
- Salt and pepper, to taste
- Half a cup of white wine, dry
- 1 clove of garlic
- 1 cup of parsley
- 3 tablespoons of chives
- 2 cups of Tuscan kale leaves
- 2 tablespoons of butter, unsalted
- 3 cups of grated Parmesan cheese
Here’s how you make it:
- Preheat the oven at 350 degrees. In a baking sheet lined with parchment paper, toast the walnuts for about 8 to 10 minutes - tossing occasionally. You’ll know they’re ready once they turn golden brown.
- In a large saucepan over medium heat, add in 2 tablespoons of olive oil. Add in the onions and stir until they turn translucent.
- Add in the arborio rice and season with salt and pepper. You’ll know they're ready once some of the grains turn translucent! This should take around 5 minutes.
- Once rice is somewhat cooked, add in the wine and let it simmer for about 3 minutes. Add in 2 cups of hot water and season again. Bring this mixture to a simmer and cover with a lid.
- Once the rice mixture has simmered, bring it to the oven and bake for 15 minutes or until the rice turns starchy in consistency.
- While your rice is baking, grab a food processor and pulse 1 clove of garlic and your toasted walnuts.
- Add in chives, parsley and 1 cup of kale leaves, your remaining olive oil and a dash of cold water. Process until you get a rich, smooth consistency.
- Get the saucepan out of the oven and set it in medium heat so you can cook the rice. Add in ¾ cup of water and constantly stir.
- Add in the pesto sauce and stir until you the the consistency you desire.
- Serve with a few kale leaves for garnish and grated parmesan cheese.
Skillet Basil Cream Chicken

Here are the ingredients:
- ¼ cup of milk
- ¼ cup of dried bread crumbs
- 4 halves of deboned chicken breasts
- 3 tbsp of butter
- ½ cup of chicken broth
- 1 cup of heavy cream
- 4 ounces of pimentos
- 1 cup of diced tomatoes
- ¼ cup of freshly minced basil
- ½ cup of grated parmesan cheese
- Salt and pepper to taste
Here’s how you make them:
- Grab your skillet let it heat over medium or high heat.
- Prepare two bowls for your milk and bread crumbs.
- Dip the chicken breast in milk, coat it with bread crumbs and set aside.
- Return to the skillet and add in the chicken breasts with half of your butter. Let each side cook for about 5 minutes. Add in more butter as you toss.
- Remove the chicken from the skillet and set aside.
- Bring the skillet back to the stove and add in the chicken broth. Bring to a boil.
- Add in the cream, pimentos and diced tomatoes. Let it simmer for about 1 minute.
- Reduce the heat and add in more parmesan cheese, if desired.
- Put the chicken breasts back in the skillet and douse with sauce. Serve as is or with rice on the side.
