St. Paddy’s Irish Beef Dinner by Taste of Home

St. Paddy’s Irish Beef Dinner by Taste of Home

Total prep time: 1 hour

Yield: 4 servings

Here's what you need:

  • 2 medium Yukon Gold potatoes
  • 2 small parsnips
  • ¾ lb. lean ground beef (90% lean)
  • 1 medium chopped onion
  • 2 cups finely shredded cabbage
  • 2 medium halved and sliced carrots
  • 1 tsp. dried thyme
  • 1 tsp. Worcestershire sauce
  • 1 tbsp. all-purpose flour
  • ¼ cup tomato paste
  • 1 can (14-1/2 oz.) reduced-sodium chicken or beef broth
  • ½ cup frozen peas
  • ¾ tsp. salt, divided
  • ½ tsp. pepper, divided
  • ¼ cup 2% milk
  • 1 tbsp. Kerrygold Salted Butter

Here's how to cook it:

  1. Peel parsnips and potatoes and cut into large pieces; put in a large saucepan and cover with water. Let it simmer. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
  2. In a large skillet, put beef and onion; cook over medium heat until meat is no longer pink; drain. Add the cabbage, carrots, thyme, and Worcestershire sauce.
  3. In a small bowl, add the flour, tomato paste, and broth, mix until smooth. Gradually whisk into the meat mixture. Let it simmer. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. Add the peas, ¼ teaspoon salt, and ¼ teaspoon pepper.
  4. Drain potatoes and parsnips; put in a large bowl, mash with milk, butter, and the remaining salt and pepper. Serve with meat mixture.

Corned Beef Hash and Eggs by Makinze Gore

Total prep time: 55 minutes

Yield: 6 servings

Here's what you need:

  • 3 tbsp. extra-virgin olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 large russet potatoes, cubed
  • 1 tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • 1 c. chopped corned beef
  • 6 large eggs

Here's how to cook it:

  1. Preheat oven to 400°.
  2. In a large ovenproof skillet, add oil, heat over medium heat. Add onion and bell pepper and cook for 5 minutes or until softened. Add potatoes, oregano, salt, and pepper. Cook until potatoes are golden and can easily be pierced with a fork, another 15 to 20 minutes. Add corned beef and cook for 5 minutes until crispy.
  3. Create 6 wells in hash, then crack an egg into each well. Season the eggs with salt and pepper. Transfer skillet to oven and bake for 8 minutes until whites are just set.

Here's what you need:

  • 2 tbsp. butter
  • 1 clove minced garlic
  • 2 tbsp. flour
  • ¼ c. milk
  • ¼ c. stout (such as Guinness)
  • 2 ½ c. shredded Cheddar cheese
  • kosher salt
  • Freshly ground black pepper
  • Pinch cayenne pepper
  • 1 16-oz. bag Ruffles
  • 6 strips cooked bacon, chopped
  • 2 tbsp. finely chopped chives

Here's how to cook it:

  1. Make the beer cheese sauce: In a small saucepan over medium heat, melt butter. Add in garlic and flour and cook for a minute or until the garlic is fragrant. Add stout and milk and let it simmer, reduce heat slightly. Add in cheese and cook until the cheese is melted. Season with salt, pepper, and cayenne.
  2. In a large serving dish, spread about half of the chips. Drizzle about half of the beer cheese sauce on top then sprinkle with chives and chopped bacon. Repeat with remaining ingredients and serve immediately.
