  • ½ cup quick-cooking oats
  • ¾ cup evaporated milk (or half-and-half)
  • 1 ​large egg (beaten)
  • ¼ cup light brown sugar (or dark brown sugar, packed)
  • ¼ cup vinegar
  • Garnish: tomato slices, spinach leaves, hard-cooked egg slices

Here's how to prepare the dish:

  1. Gather all the ingredients.
  2. Heat the oven to 350F.
  3. Grease a 9-by-5-by-3-inch loaf pan
  4. In a large bowl, combine ground ham, mustard, chopped onion, parsley, oats, milk, and egg. Stir to mix well.
  5. Place the mixture into the prepared loaf pan.
  6. In a small saucepan, combine the brown sugar and vinegar. Place the saucepan over medium heat and cook until the sugar has dissolved.

  • 200 grams young Gorgonzola

For the mayonnaise

  1. whisk together egg yolk and mustard.
  2. Slowly add the oil a drop at a time until a yellow cream is formed. (Don’t add too much oil at once, the mayonnaise will curdle.)
  3. Season with a pinch of sugar and lemon juice.

  1. Spread the mayonnaise mixture on the bread and top with the pork.
  2. Add a spoonful of cranberry sauce and add the cheese.

Here’s what you need:

  • 2 tbsp. Olive oil
  • 150g pigs-in-blankets, cut into small pieces
  • garlic 2 cloves, peeled
  • 3 egg yolks
  • 80g parmesan, finely grated, plus extra to serve
  • 1 tsp. black peppercorns ground
  • 200g spaghetti

Here's how to prepare the dish:

  1. In a non-stick frying pan over medium heat, heat the oil and cook the pigs-in-blankets for 8-10 minutes, or until crisp and cooked through. Add the garlic for the final 2 minutes of cooking time, then get rid of the garlic and take the frying pan off the heat.
  2. In a bowl, whisk together the egg yolks, parmesan, and black pepper.
  3. in a large pan of lightly salted water, cook the spaghetti following pack instructions, drain, reserve some of the cooking water. Add a ladle of the pasta cooking water to the egg yolk and parmesan mixture, and whisk again.
  4. Put the spaghetti into the frying pan with the pigs-in-blankets, and cook over very low heat. Add the egg yolk and parmesan mixture and toss together using tongs until the sauce thickens slightly and starts to cling to the pasta. Divide between two plates, and serve with another grating of parmesan over the top, if you wish.

  • 1 9-inch pie pastry
  • 1 cup half and half
  • 4 eggs (beaten)
  • 3 tbsp. honey mustard
  • 2 tbsp. flour
  • ½ tsp. salt
  • ½ tsp. thyme leaves (dried)
  • 1/8 tsp. white pepper
  • 1-1/2 cups ham (cooked and cubed)
  • 1-1/2 cups Swiss cheese (shredded; or Havarti cheese)
  • 1 cup spinach (frozen, chopped, thawed and, well-drained)
  • 2 tbsp. Parmesan cheese (grated)

Here's how to prepare the dish:

  1. Preheat oven to 350°F. Prepare pie crust and set aside.
  2. In a medium bowl, combine half and half, eggs, honey mustard, flour, salt, thyme, and pepper, and whisk until fully combined.
  3. In the prepared pie crust, layer the cubed ham, Swiss cheese, and spinach. Pour the egg mixture slowly into the pie crust and sprinkle with the Parmesan cheese.
  4. Bake the quiche for 40-50 minutes, or until crust is golden and filling is set. Let stand for 5 minutes, then cut into wedges to serve.

  • 30g unsalted butter
  • 2 finely chopped banana shallots
  • 75g finely chopped mixed nuts

  • 400g British free-range sausage meat
  • 16 strips smoked pancetta (or smoked streaky bacon, thinned out with the flat of a knife blade)
  • Vegetable oil for greasing
  • 2 tbsp. maple syrup

Here's how to prepare the dish:

  1. Heat the oven to 200ºC/180ºC fan/gas 6. In a small frying pan, heat the butter, then add the shallots. Stir-fry for 8-10 minutes until soft but not colored. Add the nuts and cook briefly until pale golden. Remove from the pan and transfer to a plate to cool.
  2. In a mixing bowl, combine the shallots and nuts with the herbs and sausage meat. Season with salt and pepper. Divide the mixture into 16 equal balls, then shape each into a flat square and set aside. Cut a pancetta (or thinned bacon) strip in half, then lay in a cross on your work surface. Put a sausage meat square in the center and fold the pancetta/bacon over to enclose. Repeat with the rest.
  3. In a lightly oiled baking tray, place the assembled pigs in blankets, seam-side down. Roast for 30 minutes, brushing lightly with the maple syrup halfway through until the pancetta is crisp and the stuffing is cooked. Serve hot.
