Mojito is a refreshing cocktail perfect to sip on the patio on hot summer days. Mojito is an iconic Cuban sour cocktail - a blend of lime, mint, pineapple, and sugar that can refresh anyone any time of the day.

Mojito Cocktail Recipe

Yield: 1 drink

Here's what you need:

  • 3 Mint leaves, plus additional for garnish
  • 1 oz. Lime juice
  • 1/2 oz. Maple syrup or simple syrup
  • 2 oz. White rum
  • 4 oz. Soda water

Here's how to mix it:

  1. In a cocktail shaker, mix the mint leaves, lime juice, and syrup.
  2. Add the rum, and fill the cocktail shaker with ice. Shake until cold.
  3. In a glass with ice, strain in the mixture, and top it off with soda water.
  4. Garnish with mint leaves.

Overload Nachos Recipe

This nachos recipe is surely a delicious one, easy to make, and perfect for your mojito time!

Total Prep Time: 50 minutes

Yield: 6-8

Here's what you need:

  • 1 tbsp. extra-virgin olive oil
  • 1 chopped large onion
  • 1 lb. ground beef
  • 2 minced garlic cloves
  • 1 tbsp. taco seasoning
  • kosher salt
  • 1 can refried beans
  • ¼ c. water
  • 1 large bag of tortilla chips
  • 2 c. shredded cheddar
  • 2 Shredded Monterey jack
  • 1 can drained black beans
  • ½ c. pickled jalapeños

For the topping:

  • 1 large tomato, diced
  • 1 avocado, diced
  • 1/4 c. thinly sliced green onions
  • 1/4 c. fresh cilantro leaves (optional)
  • Sour cream, for drizzling
  • Hot sauce, for drizzling

Here's how to prepare:

  1. Preheat oven to 425º.
  2. Line a large baking sheet with foil.
  3. In a large skillet over medium heat, heat olive oil. Add onion and cook until soft for 5 minutes, add ground beef, cook until it turns brown, and cook for 6 minutes more. Drain fat.
  4. Add garlic, taco seasoning, and season with salt. Cook until the meat is well toasted and a little crispy, and let it simmer for 5 minutes more. Add the beans and water to the skillet, and stir until combined.
  5. On the prepared baking sheet, add half the tortilla chips, top with beef-bean mixture, top with half the cheese, top with half the black beans, and top with half the pickled jalapeños. Repeat one more layer.
  6. Bake until the cheese is melted for 15 minutes.
  7. Scatter with avocado, cilantro, green onions, and tomato. Drizzle with sour cream and hot sauce and serve immediately.

Fish Tacos Recipe

Do you love fish tacos? Well, this is another perfect pair for mojitos!

Total Prep Time: 35 minutes

Yield: 4

Here's what you need:

  • Juice of 1 lime
  • 3 tbsp. extra-virgin Olive oil
  • ½ tsp. cayenne pepper
  • 2 tsp. chili powder
  • ½ tsp. ground cumin
  • 1 tsp. paprika
  • 1 ½ lb. fish filet (cod or any flaky white fish)
  • ½ tbsp. vegetable oil
  • 1 diced avocado
  • 8 corn tortillas
  • Freshly ground black pepper
  • Kosher salt
  • Lime wedges, for garnishing
  • Sour cream, for garnishing

For the Corn Slaw

  • Juice of 1 lime
  • 1 tbsp. honey
  • ½ c. mayonnaise
  • 2 tbsp. freshly chopped cilantro
  • 1 c. corn kernels
  • 2 c. shredded purple cabbage
  • 1 minced jalapeño

Here's how to prepare:

  1. In a medium bowl, whip together lime juice, olive oil, cayenne, chili powder, cumin, and paprika.
  2. Add fish, toss until evenly coated and let it marinate for 15 minutes.
  3. To make the corn slaw: In a large bowl, whip together lime juice, honey, mayonnaise, and cilantro. Add the corn, cabbage, and jalapeño. Season with salt and pepper.
  4. In a large nonstick skillet over medium-high heat, heat vegetable oil. Remove fish from the marinade, and season both sides of each filet with salt and pepper. Place fish side-down in the skillet. Cook until opaque and cooked through for 3 to 5 minutes per side. Let it rest for 5 minutes before flaking using a fork.
  5. To assemble tacos: Serve the fish flakes over grilled tortillas with avocado and corn slaw.
  6. Squeeze lime juice on top, and garnish with sour cream.
