Non-Traditional Christmas Dinner Recipes

Aunt Brenda’s Meatballs and Sauce

Here’s what you need:

MEATBALLS:

  • 1 ½ lb. gd. Beef
  • ½ lb. gd. Pork
  • 1 c. Italian Breadcrumbs
  • ½ c. grated parmesan
  • 1 tbsp. Parsley
  • 2 tsp. garlic powder
  • 2 slices of bread soaked in ½ c. milk
  • 2 beaten eggs
  • 1 tbsp. olive oil
  • 1 tsp. salt

SAUCE:

  • 2 large cans of crushed tomatoes
  • 2 medium Garlic cloves, diced or crushed
  • 1 small onion, chopped small
  • 1 can chicken broth, 15 oz.
  • 1 tsp. sugar
  • 1 bay leaf
  • 1 tbsp. basil
  • 1 tsp. parsley
  • 3 tbsp. Parmesan
  • ¼ c. wine-red or white
  • Salt and pepper to taste

Here’s how to prepare it:

  1. Put 3 tablespoons olive oil into a large saucepan, add garlic and onion, lightly brown. If you wanted to brown the meatballs, this would be the time.  Turn off heat, add tomatoes and all the sauce ingredients, stir well.  Simmer on med/low 2 hours.
  2. You can brown the meatballs or drop them raw into the boiling sauce.

Shrimp and Crabmeat Casserole

Here's what you need:

  • ½ lb. penne
  • 1 tbsp. salt
  • 1 tbsp. vegetable oil
  • 4 tbsp. butter
  • ½ lb. fresh sliced mushrooms
  • 2 tbsp. butter
  • 1 c. light cream
  • 1 (10 oz.) can cream of mushroom soup
  • ¾ c. grated Cheddar cheese
  • 1 lb. cooked shrimp, shelled, deveined, and cut bite-size
  • 1 c. cooked crab meat, cut into bite-size
  • 1 c. soft bread crumbs
  • 1 tbsp. butter

Here's how to prepare it:

  1. Boil 3 quarter water. Add salt and vegetable oil. Add penne and boil for 10 minutes. Drain and toss with 4 tablespoon butter.
  2. Sauté mushrooms in 2 tablespoons butter for 5 minutes. Mix cream, mushroom soup, and Cheddar cheese and add to penne. Add mushrooms, shrimp, and crabmeat. Place in a buttered casserole. Top with soft bread crumbs that have been tossed with 1 tablespoon melted butter.
  3. Bake at 350 ° for 25 minutes.

Lasagna Swirls

Here's what you need:

  • 1 pkg. lasagna noodles
  • 1 (16 oz.) Ricotta cheese
  • 1 pkg. frozen chopped spinach
  • 1 or 2 eggs
  • 1/4 c. grated cheese (Romano)
  • 1/4 c. Mozzarella cheese, grated
  • Basil
  • Onion powder to taste

Here's how to prepare it:

  1. Cook and drain noodles.
  2. Mix all other ingredients.
  3. Lay each noodle flat and spread a thin layer of the mixture on it.
  4. Roll each (jelly-roll style) and place in an oiled casserole.
  5. Top with your favorite marinara sauce and grated cheeses. Bake in moderate oven (350°) until heated through.
